Clean Eating "Shout Out" & Bean Spread

I loves this mag! It's not all Vegan, or even Vegetarian, but it has a wide variety of Specialty Diet recipes and every ingredient is healthy for you! They also have some pretty neat advertisements for foods and kitchen "stuffs". Love it, love it, love it!

Clean Eating "Bean Spread"

I haven't tried it yet, but it will be on the top of my list once I'm through fasting. So if anyone tries it before me, please let me know what you think! It looks and sounds great.

Ingredients

~1 head garlic unpeeled
~4 tbsp extra-virgin olive oil, divided
~1 15-oz can chickpeas, rinsed and well drained (Choose Organic, BPA-free canned beans if possible.)
~1-15-oz can fava, lima, cannellini or navy beans, rinsed and well drained (Choose Organic, BPA-free canned beans if possible.)
~1/2 cup fresh lemon juice
~2 tsp ground Tuscan spices, toasted (Tip: Combine equal amounts of ground oregano, paprika, fennel and garlic powder.)
~Pinch ground cumin, toasted
~Sea salt and fresh ground black pepper, to taste
~1/4 cup finely chopped fresh cilantro
~1/4 cup finely chopped fresh basil

Instructions

1. Preheat oven to 300. Prepare roasted garlic: Slice off top of garlic head and place garlic on sheet of parchment paper or foil. Drizzle 1 tbsp olive oil over garlic and loosely wrap in parchment or foil. Place garlic on oven rack and roast for 15 minutes or until golden brown. Remove from heat. Carefully open parchment or foil and let cool.

2. Using the tip of a paring knife, remove roasted garlic cloves from their skins. In a food processor combine garlic, remaining oil, chickpeas, beans, lemon juice and spices. Pulse until mixture resembles a thick paste. Add more olive oil, if required, to achieve desired thickness. Add herbs and pulse lightly. Transfer to bowl and serve immediately, or cover with saran wrap and refrigerate (will keep for 4 days).


I've decided to end my fast Monday. That will make a week of Juice Detoxing. I've already started a list of new recipes I'm gonna try next week. I can hear Whole Foods calling my name!

  1. I made this last week and posted about it on my blog. I LOVED it... and I'm kind of ashamed to say I was afraid of trying a bean spread. It sounded... eww. But I loved it and even my girls age 10 & 12 loved it. It was amazingly good! We added some 'spicy' spices because it seemed to need that.

    Stupid question... how do I "follow" you, my fellow Clean Eating mag fan?

  2. It does sound kinda gross! I'm so glad you let me know how it tastes. I'll have to make it this week.

    I just realized that my "follow" link has been hiding out on the bottom of the page. I'm moving it out into the open right now. Oops...haha!
