Julia's "Portabella Burger"
This is a Family Favorite...Your taste buds will not be disappointed! And it's so quick and easy to make!
Ingredients
~1/4 cup water
~1 lb portabella mushrooms (about 4 medium)
~1 large yellow onion (sliced)
~1 slice, Swiss flavored, vegan cheese
~Vegan mayo (I used Vegenaise)
~1-2 tomato slices
~2 Vegan, flat bread (2 slices)
~Vegan butter (about 1/2 tsp)
~salt to taste
In large skillet, on medium heat, cook onion and water for 5 minutes. Add mushrooms and salt. Cook until very tender. (About 20 minutes.) Place onion/mushroom mixture onto separate plate.
Butter outsides of two slices of bread. Put bread in skillet and place the cheese slice on one piece of bread and "mayo" on the other. Let heat until cheese is melted and bread is crispy on bottom sides. Remove from heat.
Layer with tomato, onion, and mushrooms.
Enjoy with a nice green salad!
