Stuffed Mushrooms

I had some mushrooms that were in need of cooking and...Oh my WOW!!! These were so good! May I present...


Julia's "Quinoa Stuffed Mushrooms"
The "Shrooms"
~1 lb stuffing(large) mushrooms
~1-2 tbsp Vegan butter (melted)


The Stuffing Ingredients
~1 cup cooked quinoa
~1 tbsp extra virgin olive oil
~1 medium carrot (shredded)
~1 small white onion (chopped)
~pinch of...Oregano & Sage (or to taste)
~salt to taste

Rinse mushrooms and remove stems. (Set stems to side for stuffing.) Place mushrooms on baking sheet and baste with melted butter. Set aside.
Chop mushroom stems into small pieces. Heat olive oil in skillet on medium heat. Add chopped onion and stem pieces. Cook until tender. Add shredded carrot, oregano & sage. Stir and remove from heat. Stir in quinoa and add salt to taste.

Fill mushrooms with quinoa stuffing. Bake at 350 for 20 minutes or until mushrooms are tender. Enjoy!

  1. Oh wow, those look sooo good! I love quinoa and I like mushrooms too! Did you create this one or use a recipe? I always look at other people's creations and wish I could just 'come up with' recipes lol... ;) Good job!

  3. Thanks Brandie! I can't believe I left that out! Yes, I did come up with it on my own. I love to throw stuff together. I'm not a "chef" but I pretend to be. :o)
